Twists with Pesto

Procrasti-bake: The art of baking instead of doing something else you should be doing. This Twists with Pesto recipe is something else. It is the perfect snack to bring to gatherings or to enjoy at home for a quick treat or an entrée. Fresh homemade dough layered with pesto, parmesan and mozzarella cheese, it is the twist perfection that will leave you hanging for more

Ingredients

  • 2.5 dl lukewarm water
  • 8 g dry yeast
  • 8 g salt
  • 1 egg
  • 1/2 dl olive oil
  • 475 g flour
  • 150 g good pesto
  • 150 g fresh mozzarella - cut into small cubes
  • 100 g fresh parmesan grated

Instructions

In a large mixing bowl, stir the yeast into the water. Add the salt, egg, olive oil, flour and knead the dough well together in a food mixer using a dough hook for 8-10 minutes until completely smooth. Cover the bowl with cling film and leave the dough to rise in a warm place for 45 minutes.

Put the dough on a floured table and roll it out with a rolling pin into a large rectangle, approx. 0.5 cm thick. Spread the pesto and sprinkle with the grated parmesan and mozzarella cubes.

Roll the dough into a long sausage and cut 12 nice slices with a sharp knife.

Grease a 26 cm sauté pan and place the twists on it. Cover with cling film again and leave them to rise for 30 minutes in a warm place.

Bake the twists at 180°C in fan-assisted oven for 20 minutes
