Crispy Potato Pancakes

Traditionally known as Placki Ziemniaczane, these Polish Potato Pancakes are similar to a hash brown. The Healthy Chef brings us a recipe for the perfect gluten-free, budget-friendly comfort food. Pan-fried in the SCANPAN TechnIQ Skillet to deliver a crispy texture. They're perfect on their own, or for inspiration, try them with greek yoghurt and freshly chopped chives, top them with a crispy fried egg, or adorn them with smoked salmon.

Ingredients

What you will need :

  • 500 g (16 oz) potatoes, peeled and grated
  • 1 onion, peeled and grated
  • 2 organic eggs
  • 2 tablespoons potato flour*
  • 1/2 teaspoon sea salt
  • Avocado oil for frying
  • *Substitutions: rice flour / tapioca / arrowroot

Instructions

Combine finely grated potato and grated onion into a bowl.

Strain in a colander or sieve, squeezing out the excess liquid. You will need to weigh out 500 g (16 0z) of squeezed potato.

Add the eggs, potato flour and salt then mix through.

Pan fry the potato cakes in a non-stick pan over a medium heat for 3 minutes each side until golden. SERVE hot and enjoy!
