Cheesecake with White Chocolate and Fennel

Did someone say chocolate? This dessert is for those with a sweet tooth and enjoys a creamy tasty dessert. This Cheesecake has a sweet white chocolate center and a hint of refreshing lime with every bite. Bake in the oven for a crispy top and dust with icing sugar for the perfect dessert to present to your friends and family.

Ingredients

  • 180 g white chocolate
  • 180 g cream cheese
  • 5 eggs (divided into whites and yolks)
  • 20 g icing sugar
  • 3 g ground fennel or ground aniseed
  • 1 lime (peel and juice)

Instructions

Melt the white chocolate in a bain-marie or in a water bath until it is just melted (45°).

Mix the cream cheese, lime peel, lime juice, ground fennel and icing sugar with a whisk and whisk the mixture into the melted chocolate. Whisk the egg yolks into the mixture.

Beat the egg whites until stiff and whisk half into the mixture. Fold the remaining stiff egg whites into the dough with a dough scraper.

Pour the mixture into a greased 24cm sauté pan.

Bake the cake in a preheated fan-assisted oven for 55 minutes at 150°C. Cool the cake in the refrigerator. Sprinkle with icing sugar before serving
